Baguio Mountain Man is an intimate culinary experience led by Chef Chavi Romawac and his partner, which operates by reservation rather than as a traditional restaurant. Guests gather in a unique setting — originally on a roof deck and now also in forested areas such as Camp John Hay Hotels — for personalized multi-course dinners that celebrate indigenous and locally sourced ingredients, slow-fire cooking techniques, and Cordillera-inspired dishes. Meals are crafted with regional flavors and presented as cultural storytelling through food.
